The “Arròs de Matances” (rice of Matanzas) is caldoso. It is a typical Ibizan dish that was traditionally prepared during the slaughter of the pig. It is cooked with chicken, pork and mushrooms. It has a unique flavor and is part of the Payesas traditions.
